Spaghetti Squash
(Technically a winter squash)

Unless noted otherwise, in all of the following, the squash has been cooked and scraped with a fork from the shells, into its spaghetti like strands. (To cook, split in half lengthwise, strip seeds and nuke for 8-15 minutes or bake face down on pan 20-30 minutes. Times depend on size.)

Avocado and Spaghetti Squash Salad -- Toss squash, julienned red and green peppers, sliced mushrooms, avocados and black olives in an oil-vinegar dressing seasoned with garlic, oregano, basil, dry mustard, Worcestershire, salt and pepper.

Bacon and Spaghetti Squash -- Toss squash with butter, garlic salt and top with crumbled bacon.

Cheese and Spaghetti Squash -- Toss with lots of grated cheese, basil and butter. Salt and pepper to taste.

Nutty-Sweet Spaghetti Squash -- Toss cooked squash strands with butter, brown sugar, chopped pecans, cinnamon, salt and pepper and serve hot.

Spaghetti Squash Italian Style -- Make a tomato sauce with onions and portabella mushrooms, oregano and red wine. Stir in lots of spaghetti squash and spread into a baking dish. Burrow in blobs of ricotta and top with lots of shredded mozzarella. Bake until bubbly.

Spaghetti Squash and Vegetable s -- In a microwave or wok partially cook sliced red pepper, onion and chopped tomato in garlic and oil. Add sliced mushrooms and zucchini, tarragon and a little vinegar and cook briefly. Before serving, toss with squash.

Spaghetti Squash and Walnuts -- Toss cooked squash in browned butter and top with walnuts.

Spaghetti Squash Frittata -- Combine squash with beaten eggs, fresh chopped parsley, Parmesan cheese, chopped red onion, garlic, salt and red pepper. Bake or nuke in a greased pan until cooked through.

Spaghetti Squash Italian Style -- Make a tomato sauce with onions and portabella mushrooms, oregano and red wine. Stir in lots of Spaghetti Squash and spread into a baking dish. Burrow in blobs of ricotta and top with lots of shredded mozzarella. Bake until bubbly.

Spaghetti Squash Pancakes -- Mix squash with enough flour and Parmesan cheese to create some body that will hold it together. Drop big spoonfuls into a buttered (or oiled) frying pan, press down and fry until both sides are light brown. Serve with sour cream or applesauce.

Spaghetti Squash Primavera -- Add partially-cooked broccoli flowerets, carrot chunks and zucchini to raw tomato sauce with chopped scallions and toss, over heat, until warm. Add squash and serve warm or at room temperature. Season as you will.

Spaghetti Squash Salad -- Toss squash with this sliced onion, red bell pepper and chunks of tomato. Dress as you like.
